from Rock/Cydia
FiveIconDock - lets you put 5 icons down there. doesnt sound like much, but trust me, once you get used to it, you wont ever go without it.
Winterboard - Theme Manager - need it to turn on/off and mix most themes
FiveColumnSB - five columns of icons across your page
BossPaper - Lets you put tons of pics rotating in the background behind your icons
OpenSSH - needed to get inside your iPhone from your computer using wifi or USB connection via WinSCP (WiFi - PC), Cyberduck (Wifi-Mac), iFunBox, iPhone Tunnel suite, iPhone Browser, etc. Very very handy for lots of things.
Themes - Ton and tons of these out there, find one your interested in, use it, then once you feel like it, SSH in, pull them out to your desktop and start editing/mixing the themes to your liking - its very fun.
Ringtones - Lots to download, plus grab iRinger (download on your computer) and use it to make any mp3 on your system a ringtone, it puts them straight into iTunes and easy to use
SBSettings - a dropdown menu that you can use over most apps that has lots of very useful toggles to control things on your iPhone, plus it has ability to show you what running in background and kill any unnessesary processes. Love this one! Plus it has Poof, which lets you hide apps you dont use.
MyWi - turns your iPhone into a wifi hotspot or allows tethering via bluetooth/usb for your laptop/computer.
Tlert - if you use native texting you can see/respond to texts without closing out your current app
QuickReply - same as above, not as nice looking
iBluetooth - allows normal bluetoothing/file transfere on the iPhone
I also prefer iNav style themes, or ones i make myself that revolve around BossPaper, so that my pages are organized/categorized and clean looking
so i make use of
SpringJumps - puts icon "shortcuts" on your springboard to autojump to a specific page
iBlank - creates a blank webclip, aka invisible icon to space out existing icons
Blanknull - if you use blanks, you will want this, it keeps the invisible icons from opening a blank web page when touched, makes them a truly "empty" space on your springboard
Categories/CategoriesSB - organize your apps into Folders, also removes the worry about hitting the page limit if you have a LOT of apps
This is by no means a complete list, its literally the tip of hte iceberg. there are tons more good stuff out there, im sure people will post more, but it should help get you started. have fun and happy iPhonning!
